Apple and Carrot Puree with Quinoa

Ingredients:

  • 2 medium-sized apples, peeled, cored, and diced

  • 2 medium-sized carrots, peeled and sliced

  • 1/4 cup quinoa, rinsed

  • 1 cup water or homemade vegetable broth (low-sodium)

Instructions:

  1. Prepare the Ingredients:

  • Peel, core, and dice the apples.

  • Peel and slice the carrots.

  • ok the Quinoa:

  • Rinse the quinoa under cold water.

  • In a small saucepan, combine the rinsed quinoa and water (or vegetable broth).

  • Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is cooked and the water is absorbed.

  • Steam the Fruits and Vegetables:

  • In a steamer basket over boiling water, steam the diced apples and sliced carrots for about 10-15 minutes or until they are tender.

  • Blend and Mix:

  • Transfer the steamed apples and carrots to a blender or food processor.

  • Add the cooked quinoa.

  • Blend until you achieve a smooth puree. If needed, add a bit of water or breast milk for a smoother consistency.
